Caramelization occurs when the sugars inside the food break down and begin to chemically transform, creating a brown-colored substance. The Maillard reaction occurs when the carbohydrates, sugars, and proteins react with each other to create other compounds. In order to achieve caramelization, the food must reach at least 230 degrees but depending on the sugar involved may need temperatures up to 360 degrees. In order to achieve the Maillard reaction, the foods must reach temperatures of at least 280 degrees up to 330 degrees.

When frying foods using the traditional method, the Maillard reaction or caramelization is achieved by submerging the food item into extremely hot oil.
