Sunday Roast Beef with Gravy

  • 1 pound bottom round rump roast
  • 1 tablespoon Emeril's Essence Creole seasoning
  • 0.5 teaspoon salt
  • 0.5 teaspoon ground black pepper
  • 3 tablespoon olive oil
  • 0.5 large onion, sliced
  • 3 Sprigs thyme
  • 5 clove Garlic, smashed
  • 2 cup low-sodium beef broth
  • 3 tablespoon butter, softened
  • 3 tablespoon flour


  1. Season the roast on all sides with the Emeril’s Essence seasoning, salt, and black pepper.
  2. Place a large Dutch oven on the stove top. Heat the olive oil, add the roast, and brown on all sides. Then, remove the roast and add the onion, thyme, and garlic. Place the roast on top, add the broth, and bring to a simmer.
  3. Slide the Pizza Rack into Shelf Position 6. Place the uncovered Dutch oven on the Pizza Rack. Select the Roast setting (1-hr. cooking time). Set the cooking temperature to 325° F/163° C. Press the Start Button to begin the cooking cycle. Cook until the desired doneness is reached.
  4. When the roast is done cooking, transfer it to a splatter. Use a slotted spoon to remove the onions and thyme from the Dutch oven.
  5. Combine the butter and flour in a small bowl.
  6. Transfer roast to platter. Using a slotted spoon remove onions and thyme.
  7. Combine butter and flour in a small bowl.
  8. Transfer the Dutch oven to the stove top. Bring the drippings to a boil and then whisk in the butter mixture. Cook while whisking constantly until thickened (about 1 min.) to make the gravy.
  9. Slice the roast and pour the gravy over the roast to serve.
