Steamed Mussels with Peppers

Recipe Type: Emeril Pressure Air Fryer

  • 2 pound fresh mussels, scrubbed and beards removed
  • 2 tablespoon olive oil
  • 1 jalapeño pepper, seeded and chopped
  • 3 Garlic cloves, minced
  • 1 bottle (8 oz.) clam juice
  • 0.5 cup White wine
  • 0.333333 cup chopped sweet red pepper
  • 3 green onions, sliced
  • 1 teaspoon minced fresh oregano or 1/2 tsp. dried oregano
  • 1 bay leaf
  • 2 tablespoon minced fresh parsely
  • 0.25 teaspoon salt
  • 0.25 teaspoon pepper
  • 0 French bread baguette, sliced, optional


1. Tap mussels; discard any that do not close. Set aside. Press saute function; select vegetables setting. Press timer; set to 8 minutes. Start. Heat olive oil in inner pot. Add jalapeño; cook and stir until crisp-tender, 2-3 minutes. Add garlic; cook 1 minute longer. Press cancel.

2. Stir in mussels, clam juice, wine, red pepper, green onions, oregano and bay leaf. Lock pressure lid. Press pressure function; select fish setting. Set to short cook time (2 minutes). Start.

3. Quick-release pressure. Discard bay leaf and any unopened mussels. Sprinkle with parsley, salt and pepper. If desired, serve with baguette slices.
