Recipe Type: Emeril Pressure Air Fryer
- 2 Large eggs
- 0.5 cup Grated parmesan cheese
- 0.5 cup whole wheat panko bread crumbs
- 1 teaspoon Emeril's Italian Essence
- 0.75 teaspoon garlic salt
- 1 medium eggplant (about 1 1/4 lbs.)
- 0 olive oil spray
- 1 cup meatless pasta sauce, warmed
1. In a shallow bowl, whisk eggs. In another shallow bowl, mix cheese, panko and seasonings. Trim ends of eggplant; cut eggplant lengthwise into 1/2-in.-thick slices. Cut slices lengthwise into 1/2-in. strips. Dip eggplant in eggs, then coat with cheese mixture. Spritz eggplant with olive oil spray.
2. Place tall wire rack into inner pot. Arrange eggplant in a single layer on rack. Cover with air frying lid. Press air fry function; select custom. Press timer; set to 6 minutes. Start.
3. Turn eggplant; spritz with additional olive oil spray. Air-fry 4 minutes longer or until golden brown. Repeat with remaining eggplant. Serve immediately with pasta sauce for dipping.
