Baby Beets with Ricotta & Pistachios

Ingredients
- 3.5 4 lb baby beets
- 2 tablespoon olive oil
- 1 teaspoon Kosher Salt
- 0.5 teaspoon ground black pepper
- 1 teaspoon chopped fresh tarragon
- 1 teaspoon chopped fresh mint
- 0.333333 cup fresh ricotta
- 1 tablespoon Honey
- 3 tablespoon chopped toasted pistachios
Directions
1. Combine the beets, olive oil, salt, and black pepper in a medium-size bowl and toss well.
2. Wrap the beets in foil and place them on the Crisper Tray. Slide the Crisper Tray into Shelf Position 2. Select the Airfry setting (400° F/205° C). Set the cooking time to 40 mins. Press the Start Button to begin the cooking cycle.
3. When the cooking time is complete, transfer the beets to a serving dish and sprinkle them with the tarragon, mint, and ricotta. Drizzle with the honey and then sprinkle the pistachios over everything.
