Lemon–Rosemary Buttermilk Scones

Ingredients

  • 1.5 cup All purpose flour
  • 2 teaspoon sugar
  • 1.5 teaspoon Baking Powder
  • 0.5 teaspoon salt
  • 0.125 teaspoon Freshly ground black pepper
  • 0.5 teaspoon finely grated lemon zesst
  • 1.5 teaspoon finely chopped fresh rosemary
  • 0.25 cup plus 2 tbsp. unsalted butter
  • 0.5 cup plus 2 tbsp. well shaken buttermilk
  • 0 butter softened
  • 0 lemon curd
  • 0 clotted cream

Directions

1. Sift together the flour, sugar, baking powder, baking soda, salt, and black pepper in a medium-size bowl. Add the lemon zest and rosemary and combine with a fork. Use a fork, your fingers, or a pastry blender to work the butter into the flour until the mixture resembles coarse crumbs.

2. Add ½ cup plus 1 tbsp. buttermilk and stir with a fork until the ingredients are just moistened. Gather the dough together and press it gently into a rough ball. Turn the dough out onto a lightly floured surface, flour your hands, and pat the dough together. The dough may still be crumbly. Knead the dough gently until it just comes together and then shape it into a rectangle shape. Use a lightly floured rolling pin to roll the dough to a thickness of about ¾ in. Cut the dough crosswise into three portions and then cut each portion into two triangle shapes. You should have six generously sized scones.

3. Select the Airfry setting (400° F). Set the cooking time to 14 mins. Press the Start Button to begin the cooking cycle. Let the Power AirFryer 360 preheat.

4. Cut parchment paper to match the size of the Crisper Tray and Baking Pan. Line the Crisper Tray and Baking Pan with the parchment paper. Place the scones on the Crisper Tray and Baking Pan. Brush the tops of the scones lightly with the rest of the buttermilk.

5. Slide the Pizza Rack into Shelf Position 1. Place the Baking Pan on top of the Pizza Rack. Slide the Crisper Tray into Shelf Position 2. Halfway through the cooking time (7 mins.), slide the Crisper Tray into Shelf Position 5 and slide the Baking Pan/Pizza Rack into Shelf Position 2.

6. Serve with the butter, lemon curd, jam, or clotted cream.
