Chipotle Carne Guisada Nachos

Ingredients
- 1 can tomato sauce
- 2 chopped chipotle peppers in adobo sauce
- 12 clove Garlic
- 1 tablespoon Chili powder
- 1.5 teaspoon Ground cumin
- 0.25 teaspoon salt
- 0.5 teaspoon pepper
- 0.75 cup beef stock
- 2.5 pound beef stew meat
- 10 cup tortilla chips
- 4 cup shredded Mexican cheese blend
- 0 Optional toppings
- 0 chopped tomatoes
- 0 sliced green onions
- 0 cilantro and sour cream
Directions
1. Combine the first 9 ingredients in the inner pot. Cover with glass lid. Press slow cook function; select beef setting. Press timer; set to 5 hours. Start.
2. Remove beef; shred with 2 forks. Reserve 1 cup cooking juices; discard remaining juices. Skim fat from reserved juices. Return beef and reserved juices to inner pot. Layer half of the tortilla chips and cheese over beef; repeat layers.
3. Cover with air frying lid. Press air fry function; select custom setting. Press timer; set to 5 minutes. Start.
4. Remove chips and beef from inner pot to serving platter. Add optional toppings if desired.
Chipotle peppers are a quick, easy way to add excitement to dishes. Often found canned in a chili sauce, chipotles are medium to hot in spice levels so they work well in a variety of dishes...and with a variety of palates!
