Green Tomato BLT

  • 2 medium green tomatoes
  • 0.5 teaspoon salt
  • 0.25 teaspoon pepper
  • 1 large egg
  • 0.25 cup All purpose flour
  • 1 cup panko bread crumbs
  • 0 Olive oil apray
  • 0.5 cup mayonnaise
  • 2 green onions
  • 1 teaspoon chopped fresh basil
  • 8 slice whole wheat bread
  • 8 cooked center cut bacon strips
  • 4 Bibb or Boston lettuce leaves


1. Cut tomato into 8 slices, about 1/4 in. thick each. Sprinkle tomato slices with salt and pepper. Place egg, flour and bread crumbs in separate shallow bowls. Dip tomato slices in flour, shaking off excess, then dip into egg, and finally into bread crumb mixture, patting to help adhere.

2. Place tall wire rack into inner pot. Arrange slices in a single layer on rack. Spritz with olive oil spray. Cover with air frying lid; select custom setting. Press timer; set to 6 minutes. Start.

3. Turn tomatoes over. Air-fry 5-7 minutes longer or until lightly browned. Repeat with remaining tomato slices.

4. Meanwhile, mix mayonnaise, green onions and basil. Layer each of

4 slices of bread with 2 bacon strips, 1 lettuce leaf and 2 tomato slices. Spread mayonnaise mixture over remaining slices of bread; place over top. Serve immediately.
